Chicken in Sun-dried Tomatoes

Easy and very quick to make.In just 30 minutes u can have a chicken that is cooked in creamy garlic parmesan and sun- dried tomato sauce.You can serve it with pasta or salad.

500 g chicken breast /thigh fillet skin removed
1/2 tsp salt
1/2 cup sun-dried tomato (drained, reserve the oil)
3/4 cup chicken stock
3/4 cup heavy cream/cooking cream
5 cloves garlic minced
1/3 cup parmesan cheese
Basil leaves
1 1/2 tbsp mustard


1. Wash the chicken and pat dry with paper towel

2. Season the chicken with salt and pepper.Heat the pan with oil(use the oil from the sundried tomato).Cook the chicken in medium high heat for 4 minutes until it turns golden brown both side.

3. Remove the chicken to the pan put in a plate and set aside.

4.On the same pan adding some oil saute the garlic intil fragrant or turns to light brown.

5. Pour in the chicken stock simmer then add in the cream,parmesan cheese,mustard and sun-dried tomato.

6. Bring to simmer reduced the heat to medium.Simmer for 2 -3 minutes until the sauce thickened already.

7. Taste the sauce season it with salt and pepper according to your preference.Add in the basil leaves and stir then return the chicken and spoon the sauce over it and simmer for 2minutes.

8. Transfer to a serving plate.
