Chicken Mami (Chicken Noodle Soup)

This is a famous Filipino Chicken Noodle Soup ( Mami ).The recipe is very basic,it is fit for beginners.You will surely like the soup when the fried garlic mix to the soup.In Philippines this is usuaaly sold in noodle houses "Mamihan".What are you waiting for try this recipe and your family will surely like it.

1 pack yellow noodles
1/2 cup oil
1 big caroots finely sliced
6 cloves od garlic minced
200g chicken thigh fillet
1 pack chicken bones
Spring onion
Egg (hard boiled)
1 small cabbage finely sliced
1 stick lemongrass

1. To make the chicken stock.Wash the chicken bones and thigh then pat dry and season with salt.Transfer it into.a pot and add enough water add in the the lemon grass (smash the lower part of it).Bring to boil for 20 minutes in medium high heat.Season with salt and pepper.Remove the chicken to the stock and chopped it roughly and transper to a plate set aside.

2. To make the garlic oil. In a pan heat the oil and saute the garlic.for 5 mins or until it turns to lightly brown.Transfer it immediately to the bowl so it will not be burn.

3.In a serving bowl put in enough noodles then add in the chicken chops, carrot,cabbage then add in the garlic oil and egg. Pour in the chicken stock.Garnish with pepper and spring onion.
