Thai Coconut Chicken



If you love Thai food this recipe is one the best and easy to make.This coconut marinade is full of flavour and it is best served with a coconut peanut sauce.


INGREDIENTS
 500g chicken thigh fillet
 4 cloves of garlic  minced
 1 tsp turmeric
  2 tsp coriander powder
 4 slice ginger minced
 1 tsp curry powder
 2 lemon grass white part only finely chopped
  1 tsp chilli chopped
 2 tbsp brown sugar
  2 1/2 tbsp fish sauce
 1 cup coconut milk

COCONT PEANUT SAUCE
1/2 cup coconut milk
2 tbsp peanut butter
2 tbsp hoisin sauce
1 1/2 tbsp lime juice
1 garlic clove minced
1/2 tsp chilli flakes or fresh chilli


METHODS
* Clean the chicken and wash then pat dry with paper towel set aside

* In a  bowl mix all the ingredients for marinade and put the chicken marinade it for 3 hrs but the best is 24 hrs..

* When the chicken is ready to cook grilled it or  use a non stick pan just oil it a bit.

* Transfer to a serving plate garnished and pour the coconut peanut sauce
