Mee Rebus ( Yellow Noodle with Gravy) Recipe


Mee Rebus is a Malay noodle dish. The dish is made of yellow noodles that serve with a slightly spicy and sweet thick gravy that is topped with friend bean curd or tofu, green chilli, boiled  egg, spring onion and fried shallot. And the final touch is a squeeze  of lime.

INGREDIENTS 
250 g  egg noodles 
eggs  boil
Lime wedges 
Spring onion
Coriander leaves
Fried bean curd or tofu
Fried shallots 
Bean sprouts  or Dow miao leaves
5 PCs sweet potato boil then puree
1 stalk lemon grass bruised 
2 litres water
1 1/2 tbsp palm sugar
1/2 cup peanut  roasted then crushed  it with mortal and pestle
4 tbsp oil
2 tbsp curry powder
1 green chilli sliced 


For the Paste
1 inch fresh ginger
6 red shallots 
1 big onion
2 inch fresh galangal
6 cloves garlic
2 1/2 tbsp dried shrimp
2 tbsp fermented soy bean paste


PREPERATION
1. Boil the sweet potato and pureed  it using a potato ricer. Aiming a very fine paste and no large lumps. Set aside.

2. Blanched  the egg noodles and bean sprouts set aside.

3. Roast the peanut let it cool and crushed  it  by using mortal and pestle.

4. Slice  into cubes the tofu and fry set aside.

5. Hard boil the eggs and cut into half set aside.

METHOD 
1. Put into a blender all the mee rebus I gradients with 1/2 of water then blend it until u get a fine paste.

2. In a large pot heat the oil and pour in the mee rebus paste  and the bruised  lemon grass. Cook it for 2 to 4 minutes until fragrant.

3. Add the curry powder and cook for 5 to 10 minutes then add the potato puree stir well and cook in medium add the water and cook until the gravy thickens already.

4. Add the palm sugar and crush peanuts . Add more water if the sauce is too thick season with salt and water. 

To Assemble
1. Place the yellow noodles into a bowl.

2. Put in the fried  tofu and bean sprouts or Dow miso leaves then pour the gravy.

3. Garnish with green chilli, boiled egg, fried shallots, spring onion and coriander leaves.

4. Drizzle  with lime then serve.
