Vietnamese Paper Rice Spring Rolls Recipe

Simple but healthy and delicious recipe that surely you will like . This  spring rolls using a rice paper wrappers and best serve with lime peanut sauce. Actually u can add what ever meat u like but in this recipe I just used tofu and vegetables and glass noodles.

5 -8 rice paper wrappers 
3 coriander root stalk
2 gloves garlic
5 pcs whole black pepper
2 carrots finely sliced  in strips
half of cabbage head finely sliced 
1 cup glass noodles
2 tbsp fish sauce
Sesame seeds optional 
Chilli flakes optional 
1 pcs tofu slice

1 cloves garlic minced
1 tbsp hoisin sauce
3 tbsp peanut butter
1/2 c fresh milk
3 tbsp lime juice
1 tsp sugar

1. Mix all the ingredients  for the peanut sauce and keep aside. 

2. Soak the glass noodles in warm water for 5 minutes, drain and keep aside.

3. Using a mortal and pestle pound the garlic, whole pepper and coriander roots. Make a rough paste.

4. In a pan heat the oil and fry the tofu until it turns lightly  brown. Set aside.

5. In same skillet  saute the paste until fragrant and put in the carrots saute for 5 minutes and then followed by cabbage and the glass noodles stir and put in the tofu stir again and add the fish sauce cook for 5 minutes.

6. Get 1 pcs of rice paper wrapper soak it into top water for 20 sec then place it in a flat surface or in a chopping board. Place one lettuce on the centre and scoop a stir fry vegetable season with chilli flakes and sesame seeds then fold in half and both sides  and rolled it. Just repeat it with the other wrappers until ur done.

7. Put in a serving  plate and serve with lime peanut sauce.
